How it comes together.
- Step 01
Preheat a grill to high heat. Mix butter with garlic, parsley, chives, lemon zest, lemon juice, and salt.
- Step 02
Set oysters cup-side down on the hot grate and cover for 2 to 3 minutes until the shells begin to pop open.
- Step 03
Carefully remove oysters and pry fully open with an oyster knife. Detach the top shell and keep the oyster in the bottom shell with its liquor.
- Step 04
Dollop a small spoon of herb butter onto each oyster and return to the grill.
- Step 05
Grill 1 to 2 minutes just until butter bubbles and oysters are barely set.
- Step 06
Transfer to a platter and serve immediately with lemon wedges.
