— The Method

How it comes together.

  1. Step 01

    Warm the teapot or glasses with hot water, then pour it out. Add the green tea leaves and sugar to the pot.

  2. Step 02

    Bring water to a boil (slightly below a rolling boil is best for green tea — around 165–175°F if you're precise). Pour a small amount of water into the pot and swirl to rinse the leaves, then discard this water.

  3. Step 03

    Pour the remaining hot water over the tea leaves and let steep for 3 minutes. The liquid should turn pale golden-green. Taste and adjust sugar if needed.

  4. Step 04

    Pour into small ornate glasses, holding the pot high to aerate the tea as it pours. This creates a light foam and cools the tea slightly. Serve immediately, traditionally as an accompaniment to pastries or as a palate cleanser after a meal.
