How it comes together.
- Step 01
Pat cod dry and season both sides with salt and pepper. Heat neutral oil in a skillet over medium-high heat.
- Step 02
Sear cod until golden on the first side, about 3 to 4 minutes. Flip and cook 2 to 3 minutes more until just cooked through.
- Step 03
Transfer fish to warm plates. Lower heat to medium and add butter to the same skillet.
- Step 04
Cook butter until it foams and turns hazelnut brown, then add capers and garlic for 20 seconds.
- Step 05
Turn off the heat and stir in lemon juice. Spoon the brown butter over the cod immediately.
- Step 06
Finish with chopped parsley and serve right away.
